A broken leg and a pizza

So... today was a rather eventful day. We got a text message (yes, a TEXT) from Andrew last night that says, "Where are yall? I think I broke my leg". He wasn't completely sure and could put a little bit of pressure on it so the decision was to wait until today to see if it was any better. It wasn't. After pulling some strings at various doctor's offices we finally squeezed in a visit at NEO about 30 minutes before they closed. The diagnosis: hairline fracture in the left fibula, right above the ankle bone. Ughhh poor guy! He was put in a cast and will have it for the remainder of the summer. Everyone say a prayer that his leg fully heals QUICKLY!

Andrew went home and we took a little nap. Actually a 3 hour nap. Oops. When we woke up we decided to make a pizza that we have been talking about for a few days. I sure am glad we did! It may be one of the most delicious things I have ever put in my mouth.

First, get a pizza crust and spread a light layer of Alfredo sauce all over:

I liked this crust because it was "thin and crispy" just like it says =)

Cut up spinach, tomatoes, onion, mushrooms, and chicken (or really anything that you like!):

I used about 2 cups of spinach, 1 tomato, 2 chicken breasts, etc.

Sprinkle an Italian Blend of cheese... I used a VERY generous amount

Preheat over to 450 and then when you put the pizza in reduce heat to 425 degrees. We cooked ours for about 10 minutes. The result: YUM.

This is what we had left, but I'm pretty sure Pat just went and snagged it.

HAVE A GREAT WEEKEND EVERYONE!
