I found a recipe for grilled avocado the other day when I was blog browsing and decided to give it a shot tonight. Everyone loves fresh avocado made into delicious guacamole, or cut into thick slices on a sandwich, or just plain ole scooped out with a spoon and sprinkled with salt. When I saw this recipe I was excited to try it in a different way!
First- I cut the avocado in half, took the seed out and scooped a better hole, brushed it with olive oil, and squirted it with lime juice.
Next- I threw them on the George Foreman and grilled for 7 minutes like so:
How funny does that look!?
After they finished I filled the hole with a dollop of salsa and a dollop of sour cream like so:
Pair it with a piece of baked tilapia seasoned with lemon pepper, a slice of cantaloupe, and a glass of pink lemonade and head outside with your significant other for a wonderful evening.
Make sure to save any leftover cantaloupe to cut up and put in a cup of plain vanilla yogurt for dessert!
