It's a great DAYYYYY to be alive

Thanks Travis Tritt for the title inspiration. I had a great day today! You know those days. Nothing abnormal. Just good! It's late and I have a lot to do before bed but just wanted to give a quick recap of the day. School was good. After my tutoring group got done I met Pat at the Salvation Army to help serve dinner. I was moved to tears about 4 times. I literally had to to turn around so no one could see me! I met some amazing people with some amazing stories. The thing is- most of the stories show that it could be any of us. They are people who just happen to be in an unfortunate situation at the moment. The best part about the people I met is how grateful they are and how great of an attitude they have about life and God.

ANYWAY. I have to go make a Civics test but I wanted to leave you with an "outfit post"

Since I did not check out what the topic was for tonight's post until after I changed into my pajamas and sat down on the couch to start my evening work- I am going to spare you.

Can't think of a title

You like my title? I couldn't think of one and that is what I ended up coming up with. Good stuff huh?


Day 12.  Write about what wears you out as a woman.


Being a woman is tiring stuff. We have to cook, clean, do the laundry, and have babies. 


KIDDING. Totally kidding. I can't even get in the mindset to write this post right now because I can't write anything without making a cliché woman joke. Or dropping the hormones bomb. 


I don't think the fact that I get worn out has anything to do with the fact that I am a woman. I think it has to do with the fact that I am a hard worker who always wants to put my whole heart into everything that I do. I don't do ANYTHING half-hearted. 


Ok that's all the serious stuff I can type right now. I'm just not in a serious mood today. Maybe it's the Super Bowl? I'll leave you with these photos of our very serious outfit shoot today.

You pick that up on the side of the road?

I don't know how many times I heard that today. I guess a lot of people in North Alabama don't have the same appreciation for faux fur that I do. Haha.

Had a great time going shopping for stuff for my classroom with my mom, decorating it a little bit, watching my little brother play some intense basketball, and going to dinner with my fabulous in-laws.

Bedtime. Hubs filmed and edited the video they are playing at church tomorrow. I'm excited to see his talents on the big screen so I gotta get there early!

Oh saturday how I love youuu

I look forward to Saturday alll week. I love sleeping in with hubs, getting up and getting to actually enjoy my coffee (as opposed to chugging it on the way out the door the rest of the week), eating a good breakfast, reading blogs, watching TV- I could go on and on. 


As I type I can smell turkey bacon and eggs being cooked in the kitchen =)


My challenge for day 11 is to post a recipe. I posted several recipes of things we cooked this past week and I don't typically cook new things on the weekend. 


Tomorrow being the Super Bowl, I do have football food on my mind. I searched the internet for semi-healthy recipes that are based around our traditional football food and I found some!


I think I am going to cook...

Oven "Fried" Chicken Fingers with Honey Mustard Dipping Sauce courtesy of Cooking Light

  • Sauce:
  • 1/4  cup  honey
  • 1/4  cup  spicy brown mustard
  • Chicken:
  • 1 1/2  pounds  chicken breast tenders (about 16 pieces)
  • 1/2  cup  low-fat buttermilk
  • 1/2  cup  coarsely crushed cornflakes
  • 1/4  cup  seasoned breadcrumbs
  • 1  tablespoon  instant minced onion
  • 1  teaspoon  paprika
  • 1/4  teaspoon  dried thyme
  • 1/4  teaspoon  black pepper
  • 1  tablespoon  vegetable oil

1. To prepare sauce, combine honey and mustard in a small bowl; cover and chill.
2. Preheat oven to 400°.
3. To prepare chicken, combine chicken and buttermilk in a shallow dish; cover and chill 15 minutes. Drain chicken, discarding liquid.
4. Combine cornflakes and next 5 ingredients (cornflakes through pepper) in a large zip-top plastic bag; add 4 chicken pieces to bag. Seal and shake to coat. Repeat procedure with remaining chicken. Spread oil evenly in a jelly-roll pan, and arrange chicken in a single layer in pan. Bake at 400° for 4 minutes on each side or until done. Serve with sauce.

*While your average restaurant chicken fingers would run you about 350-400 calories for 2 chicken fingers and some sauce, these run you about half of that!*
Along with the chicken fingers we will definitely be having the heath blondies that I posted yesterday. And they are definitely not light. =)

The ultimate teacher

Not talking about me but I'm pretty close =) KIDDING.


Day 10.  What is Jesus teaching you as a wife, mom, or friend? (Or just woman in general?)


God has constantly shown me lately that He is going to take care of us and to STOP WORRYING! Every time I begin to worry about something new it is almost like he laughs and is like "Why are you worrying? Don't you believe me when I say I will take care of you?"


As some of you loyal blog followers know, we had big plans to move to Pensacola after I graduated for Pat to start a job in surgical sales. Things just did not work out. It put us in a bind. I was worried. Pat was worried.  


He made us wait as long as we possibly could and then BAM! I got two wonderful jobs within 2 weeks and the opportunity to stay where we are- 15 minutes from our awesome families. I am literally spending 10 hours a day with kids and could not be happier!


These past ten months of marriage have been some of the best, most awesome, perfect times I could imagine. No we don't have any money. No we don't have the new cars that we both need, or the greatest house in the world, or the budget to go on cool dates and vacations. But we have each other and a Lord that will get us through anything. 


He has definitely taught me that.
